Refined Sugar Free Apple Pie Cookies

Ingredients

  • 4 apples, peeled and diced
  • ¼ cup butter
  • ¼ cup apple cider (or water)
  • ¼ cup all-purpose flour
  • ¼ cup Date Syrup
  • ¼ cup Date Sugar
  • 3 tsp pumpkin pie spice
  • 2 pre-made pie crusts
  • Egg wash and cinnamon sugar

Directions

  1. 1Peel and dice apples.
  2. 2Melt the butter in a saucepan over medium heat, then add apples, date syrup, date sugar, cinnamon, flour, and apple cider.
  3. 3Cook until the mixture has thickened slightly, being careful not to burn anything.
  4. 4Unroll one of your pie crusts on a flat surface, and cut circles out of it using a wide mason jar lid, rerolling the dough and cutting circles until you don't have any dough left.
  5. 5Place the circles on a parchment-lined or nonstick cookie pan and put about two tablespoons of apple pie filling on each.
  6. 6Cut your other premade pie crust into narrow strips about a half inch wide.
  7. 7To make the lattice design, use six strips per cookie — 3 across and 3 woven over and under on an alternating basis. Lay three strips parallel and evenly spaced over the cookie, then weave the next three strips perpendicularly: under-over-under, over-under-over, and under-over-under. Use your mason jar lid to trim the strips into a perfect circle. Repeat for each cookie.
  8. 8Bake at 350ºF for 20–25 minutes or until lightly brown.
  9. 9Serve with a scoop or two of vanilla ice cream and enjoy your very own bite-sized apple pie cookies!
