Date Seed Coffee Chocolate Energy Balls

Ingredients

  • 1 cup rolled oats
  • 1 cup pitted Medjool dates (about 10–12 dates)
  • ¼ cup almond butter
  • 2 tbsp cocoa powder
  • 2 tbsp Date Seed Coffee powder
  • 1 tsp vanilla extract
  • ¼ tsp salt

Directions

  1. 1Add the oats to a food processor and pulse until they break down into a coarse flour.
  2. 2Add the pitted dates and process until the mixture starts to clump together.
  3. 3Add the almond butter, cocoa powder, Date Seed Coffee powder, vanilla extract, and salt. Process until everything is well combined and a thick, sticky dough forms.
  4. 4If the mixture is too dry, add 1–2 tbsp of warm water and pulse again until it holds together when pressed.
  5. 5Scoop out about 1 tablespoon of the mixture at a time and roll firmly between your palms into balls.
  6. 6Place the balls on a parchment-lined tray and refrigerate for at least 30 minutes until firm.
  7. 7Store in an airtight container in the fridge for up to 2 weeks or freeze for up to 3 months.
