Date Seed Coffee Chocolate Energy Balls
Ingredients
- 1 cup rolled oats
- 1 cup pitted Medjool dates (about 10–12 dates)
- ¼ cup almond butter
- 2 tbsp cocoa powder
- 2 tbsp Date Seed Coffee powder
- 1 tsp vanilla extract
- ¼ tsp salt
Directions
- 1Add the oats to a food processor and pulse until they break down into a coarse flour.
- 2Add the pitted dates and process until the mixture starts to clump together.
- 3Add the almond butter, cocoa powder, Date Seed Coffee powder, vanilla extract, and salt. Process until everything is well combined and a thick, sticky dough forms.
- 4If the mixture is too dry, add 1–2 tbsp of warm water and pulse again until it holds together when pressed.
- 5Scoop out about 1 tablespoon of the mixture at a time and roll firmly between your palms into balls.
- 6Place the balls on a parchment-lined tray and refrigerate for at least 30 minutes until firm.
- 7Store in an airtight container in the fridge for up to 2 weeks or freeze for up to 3 months.
