Date-Sweetened Chocolate Cake

Ingredients

    Chocolate Cake

  • 2 cups Date Sugar
  • 1 ½ cups all-purpose flour
  • ¾ cup cocoa powder
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1–3 cups milk
  • ½ cup coconut oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • Chocolate Frosting

  • 1 cup Date Paste
  • ¼ cup warm water
  • ⅔ cup unsalted cashew butter
  • ½ cup cacao powder
  • ½ tsp vanilla extract
  • A pinch of sea salt
  • 2 tbsp melted coconut oil (add more as needed)

Directions

    Chocolate Cake

  1. 1Preheat the oven to 350ºF.
  2. 2Mix all your dry ingredients together in a large bowl until well-combined.
  3. 3In a separate bowl, mix all your wet ingredients together until smooth.
  4. 4Mix your wet ingredients into your dry ingredients using a high-powered electric whisk or stand mixer. Once well-combined, set aside.
  5. 5Pour into two round 8 x 8 cake pans and bake for 30–35 minutes.
  6. Chocolate Frosting

  7. 1Soften your date paste with a 30–60 second spin in the microwave, being careful not to burn it.
  8. 2Combine all frosting ingredients in a stand mixer or blender and mix until smooth and pasty. The frosting should be thick and spreadable. If it is chunky or dry, add more melted coconut oil as needed.
  9. 3After your cakes have cooled, apply your frosting using a spoon and a frosting knife.
  10. 4Once done, cut up the cake and enjoy!
